Why it works: Beans and lemon match in chemistry and in kitchens. They rank in the top 12% of all ingredient pairs, and cooks put them together in 1,474 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
To Boil French Beans
Ingredients
Directions
Prepare and boil
Trim the ends and stalks of the beans and wash them well.
Boil the beans in a large saucepan of salted, fast-boiling water for 12 to 18 minutes until tender.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Young french beans
- Provide the main body of the dish and are cooked until tender.
- Fresh butter
- Adds fat and richness, coating the beans and carrying flavour.
- Lemon juice
- Adds acidity that brightens the buttery flavour of the beans.
The step that matters
Heat the beans until very dry before adding butter. Any surface water left on the beans dilutes the butter and stops it clinging evenly, so the beans end up watery rather than glossy. Drying them over heat lets the butter coat the surface properly.
Swap the white pepper
How well each one fits the dish's main ingredients (beans, butter, lemon):
- Parsleyfits better
- Thymefits better
- Sagefits better
- White pepperthe original
Fit is the average pairing score against beans, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
