Stewed Cucumbers

Ingredients

Directions

Prepare the cucumbers

  1. Pare and split the cucumbers into quarters, removing the seeds.

  2. Cut each quarter in half and sprinkle with white pepper or cayenne.

Fry and stew

  1. Melt the butter in a pan and lightly fry the cucumbers until golden.

  2. Remove the cucumbers and drain them on a paper towel.

  3. Place the cucumbers in the brown gravy and stew gently for 25 to 30 minutes until tender.

  4. If the gravy needs thickening, remove the cucumbers and stir in flour and butter until smooth.

  5. Optionally, add lemon juice or chili vinegar to the sauce before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the main body of the dish, softening into tender pieces during stewing.
Butter
Adds richness and helps the cucumbers brown lightly when fried.
Brown gravy
Forms the sauce and carries savory flavor into the cucumbers as they stew.
Flour
Thickens the gravy so it clings to the cucumbers when stirred in with butter.

The step that matters

Stewing gently until tender. Cucumbers are mostly water, so a gentle simmer keeps them tender and intact, while a hard boil can make them break down and turn mushy in the gravy.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (cucumber, white pepper, butter, flour):

  1. Avocadofits better
  2. Lemonthe original
  3. Limefits about as well
  4. Raisinfits about as well

Fit is the average pairing score against cucumber, white pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
