Another Receipt for Tartlets

Oven, in the book's wordsA very slow oven

Ingredients

Directions

The book says “a very slow oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the shells

  1. Cut 24 rounds of pastry to form 12 tartlet rings by pressing a small cutter through them.

  2. Moisten the rings with cold water or egg white and lay them on the remaining rounds of pastry to form the tartlet rims.

  3. Bake in a 400°F (200°C) oven for 10 to 12 minutes.

Fill and serve

  1. Fill the warm tartlets with preserve.

  2. Cut small ornaments from the leftover pastry, bake them lightly, and place them on top of the preserves.

  3. Serve the tartlets cold, or return them to the oven for 1 minute to serve hot.

What each ingredient does

Pastry
Forms the crisp, sturdy shell that holds the filling.
Preserve
Provides sweetness, fruit flavour and a moist, glossy filling.
Egg white
Can be brushed on as glue to bond rims and help them brown.

The step that matters

Fill the warm tartlets with preserve. Filling while the shells are still warm helps the preserve settle and bond to the pastry. Cold shells can let the filling slide or leave gaps.
