Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Grate the cheese and sprinkle it over the cream crust.

  2. Fold the mixture together and roll it out lightly twice until well mixed.

  3. Cut the mixture into small rounds using a paste cutter.

  4. Mix the egg yolk with a little milk and wash the rounds with this mixture.

Bake and serve

  1. Bake in a preheated oven at 400°F (200°C) for about 15 minutes.

  2. Serve very hot.

What each ingredient does

Cream crust
Forms the dough base that holds the cheese and gives the rounds their structure.
Parmesan cheese or dry white english cheese
Adds savoury flavour and richness, and browns as it bakes.
Egg yolk
Brushed on as a wash, it promotes golden browning and a glossy finish.
