Oranges Filled with Jelly
Ingredients
Directions
Cut a round hole about the size of a shilling from the top of each orange.
Carefully remove the insides without breaking the rinds and place them in cold water.
Make jelly from the juice, pressing and straining it until clear.
Color half of the jelly with prepared cochineal and leave the other half pale.
Once nearly cold, drain and wipe the orange rinds.
Fill the rinds with alternating stripes of the two jellies.
When completely cold, cut the oranges into quarters and arrange them on a dish with light branches of myrtle.
