Quince Blanc-manoe, with Almond Cream

Ingredients

Directions

Make the almond cream

  1. Blend the almonds into a smooth paste.

  2. Add a few drops of water to prevent oiling.

  3. Pour in the boiling quince juice. Mix well.

  4. Strain the mixture through a strong cloth, twisting the ends to extract the cream.

Cook and set

  1. Return the juice to the heat.

  2. Add the sugar and bring to a boil.

  3. Stir in the isinglass.

  4. Simmer for 5 minutes, skimming off any scum.

  5. Stir the mixture until nearly cold.

  6. Pour it into a mold to set.

What each ingredient does

Quince juice
Provides the main liquid and the fruit flavour of the dessert.
Jordan almonds
Supply richness and body to the cream once blended into a paste.
Sugar
Adds sweetness and balances the tartness of the quince juice.
Isinglass
Sets the liquid into a firm, tender gel as it cools.

The step that matters

Stir the mixture until nearly cold. Isinglass sets as it cools, so stirring while the mixture cools keeps it smooth and evenly mixed. Pouring too early or letting it set unevenly can leave lumps or a layered texture.

Swap the quince

How well each one fits the dish's main ingredients (almond, sugar):

  1. Vanillafits better

Fit is the average pairing score against almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
