German Puffs

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Pound the Jordan almonds to a perfectly smooth paste.

  2. Gradually mix in the yolks of six eggs and the whites of three eggs.

  3. Dissolve the butter and sugar in the cream, then pour this hot mixture into the egg mixture, stirring briskly.

  4. Once cool, flavor with brandy, cuirasseau, orange-flower water, or lemon-brandy.

Bake

  1. Butter some cups thickly and add a few slices of candied citron or orange rind.

  2. Pour the mixture into the cups and bake for 20 minutes in a slow oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and help the puffs set to a tender custard-like texture.
Egg whites
Add structure and lift so the mixture bakes up light rather than dense.
Butter
Adds fat for richness and a tender, moist crumb.
Cream
Adds moisture and richness, giving a soft, smooth texture.
Jordan almonds
Provide body and a nutty flavor from the ground paste.

The step that matters

Stirring the hot butter-sugar-cream into the eggs. If the hot cream mixture is poured in too quickly or without stirring, the eggs can scramble in lumps. Stirring briskly while pouring keeps the eggs evenly blended into a smooth batter.

Swap the orange

How well each one fits the dish's main ingredients (almond, egg, cream, butter, sugar, brandy):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against almond, egg, cream, butter, sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
