What each ingredient does

Rhubarb
Provides the tart flavour and the fibrous body that gives the jam its structure.
Fine sugar
Sweetens the jam, draws out juice, and helps it thicken and set as it boils.

The step that matters

Boiling rapidly after the stalks are tender. Sugar and fruit only set into a jam once enough water has evaporated and the sugar concentration rises. A rapid boil with frequent stirring drives off moisture and prevents scorching on the bottom of the pan.
