Ingredients

Directions

Prepare the fruit

  1. Remove the stalks and tops from the gooseberries and weigh them.

  2. Braise the gooseberries slightly.

Make the jam

  1. Boil the gooseberries for 6 to 7 minutes, turning them well.

  2. Add 2.5 cups of powdered sugar for every 3 pounds of gooseberries.

  3. Boil the mixture quickly for 45 minutes, stirring constantly and skimming off any scum.

  4. For a finer preserve, rub the fruit through a sieve before adding the sugar.

What each ingredient does

Gooseberries
Provide the bulk of the jam and natural pectin that helps it set.
Sugar
Sweetens the jam and helps it thicken and keep.

The step that matters

Boil quickly while stirring constantly. Sugar-thickened fruit scorches easily on the base of the pan, so constant stirring prevents burning. Skimming removes scum that would cloud the jam and spoil its clear appearance.
