Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, work the butter into the flour until crumbly.

  3. Mix in the sugar, salt, candied rind, and nutmeg.

  4. Pour in the boiling cream or milk and mix slightly.

Make the dough

  1. Add the egg yolks and one egg white, mixing until well combined.

  2. Dust in the baking soda and mix thoroughly.

Bake

  1. Grease a baking sheet with butter.

  2. Drop spoonfuls of the mixture onto the baking sheet.

  3. Bake in the preheated oven for 15 to 25 minutes, until firm and lightly colored.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the structure that holds the buns together as they bake.
Butter
Rubbed into the flour to add richness and a tender, crumbly texture.
Egg yolks
Add richness and help bind the dough while adding color and tenderness.
Baking soda
Reacts with the dough to help the buns rise and spread lightly.
Boiling cream or milk
Adds moisture and softens the flour so the dough comes together.

The step that matters

Dusting in the baking soda and mixing thoroughly. Baking soda needs to be evenly distributed so every bun rises consistently. Clumps can leave bitter spots or uneven rising, so thorough mixing matters.
