What each ingredient does

Calf's feet jelly
Adds body and a gelling richness that gives the punch a silky mouthfeel.
Seville oranges
Provide sharp acidity and fragrant citrus oils that balance the sweetness.
Lemons
Supply acidity and aromatic oils from the rind and juice.
Capillaire
Adds sweetness to balance the acidity of the citrus.
French brandy
Contributes alcohol strength and warming aroma.

The step that matters

Let it sit near the fire for 15 minutes. Gentle warmth while the mixture stands helps the rind oils and flavours infuse into the liquid. Keeping the time short avoids over-extracting bitterness from the citrus pith.
