What each ingredient does

New milk
Forms the creamy body of the punch that the other ingredients are mixed into.
Eggs
Add body and a silky, slightly thickened texture when gently heated with the milk.
Sugar
Sweetens the punch and balances the sharpness of the spirits and lemon.
Rum
Provides the main spirit flavour and aroma of the punch.
Brandy
Adds further alcohol and a rounder, fruity aroma alongside the rum.

The step that matters

Stir the egg mixture into the milk without letting it boil. Egg proteins set and curdle when overheated, so the milk must stay hot but not boil to keep the punch smooth and creamy.
