Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

A Swiss Mayonnaise

Ingredients

Directions

  1. Beat the butter to a cream.

  2. Gradually add the butter to the pounded yolks of the eggs until smooth.

  3. Slowly incorporate the salad oil until no particles remain visible.

  4. Add a small amount of coarse sea salt and vinegar to taste.

  5. Optionally, substitute some vinegar with fresh lemon juice and add a pinch of Cayenne.

  6. Carve the boiled fowls neatly and trim the joints.

  7. Layer the inferior parts on a large plate and spread a thick portion of the sauce over them.

  8. Arrange the joints symmetrically over the sauce in a flat layer.

  9. Build a pyramid with the fowl and decorate with egg whites and halved lettuce hearts.

  10. Place the boiled eggs around the base, cutting a small slice from the large end to stand them upright.

  11. Decorate with a sprig of parsley or other foliage.
