Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Sago Soup
Ingredients
Directions
Prepare
Wash the sago in several waters and float off the dirt.
Put the sago into 3 quarts of good cold stock.
Cook
Let it stew gently for 30 to 45 minutes, stirring occasionally to prevent sticking.
For a thicker consistency, add ¼ ounce more sago for each pint of liquid.
Flavor and serve
If desired, flavor with Harvey's sauce, cayenne, lemon juice, sugar, and sherry, or substitute good beef broth for a simpler version.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sago
- Swells as it simmers, thickening the stock into a soup with a soft, starchy body.
- Cold stock
- Serves as the liquid base that the sago absorbs and thickens as it cooks.
The step that matters
Stirring while it stews. Sago starch settles on the bottom of the pot and sticks and scorches easily, so occasional stirring keeps the soup evenly thickened and prevents burnt flavour.
Swap the lemon
The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sauce, pepper, sugar, sherry):
- Lemonthe original
- Pineapplefits about as well
- Plumfits about as well
- Figfits about as well
Fit is the average pairing score against sauce, pepper, sugar, sherry. Candidates are from the same food group and used in at least 100 recipes.
