What each ingredient does

Beef
Contributes meat flavor and body to the stock as it simmers for hours.
Mutton
Adds rich, savory meat flavor and gelatin-rich body to the stock.
Onions
Add sweetness and aromatic depth as they soften and release flavor into the liquid.
Celery
Adds a fresh, vegetal aroma that rounds out the stock's flavor.

The step that matters

Skim the liquid as it begins to boil. Impurities and proteins rise to the surface as the liquid heats. Removing them early keeps the stock clear and prevents a cloudy, scummy flavor.
