Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

  2. Add the sliced carrots and stew gently for 1 hour without browning.

  3. Pour in the brown gravy-soup and simmer for 50 to 60 minutes until the carrots are tender.

  4. Press the mixture through a sieve or strainer, adding salt and cayenne pepper if desired.

What each ingredient does

Carrots
Provide the main body, sweetness and flavour of the soup once softened and pressed smooth.
Butter
Gently cooks the carrots in fat, carrying flavour and giving a rich mouthfeel.
Brown gravy-soup
Forms the liquid base that the carrots simmer in and become tender within.
Bread
Fried dice served alongside for crunch in contrast to the smooth soup.

The step that matters

Stew the carrots without browning. Keeping the heat low and the carrots pale prevents scorching and bitter, toasted flavours, so the soup stays sweet and mild in colour.

Swap the carrot

How well each one fits the dish's main ingredients (butter, pepper, bread):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits better
  4. Carrotthe original

Fit is the average pairing score against butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
