What each ingredient does

Lemons
Provide the main body of the pickle and its sharp citrus flavour.
Coarse sea salt
Draws out liquid from the lemons and helps preserve them during the week of salting.
Horseradish
Adds a pungent, sharp heat that mellows during the long maturing period.
Shallots or garlic
Contribute savoury pungency and aroma to the pickle.
Vinegar
Acts as the preserving liquid and adds acidity that keeps the pickle stable.

The step that matters

Pouring the boiling vinegar over the lemons. Hot vinegar must be added to the lemons in a clean jar. Heat and acidity help preserve the pickle, and cooling or contamination can let it spoil before it matures.

Swap the white pepper
