Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the bulk of the pulp and juice that form the catsup's body.
Coarse sea salt
Draws out juice from the tomatoes overnight, concentrating their flavour before cooking.
Small capsicums
Add pungency and savoury depth as they simmer in the reduced juice.
Shallots
Contribute mild onion-like aroma and sweetness during the long boil.

The step that matters

Fill the bottles while the catsup and bottles are hot. Filling hot catsup into warm bottles and sealing immediately helps drive out air and create a vacuum, which reduces spoilage risk in shelf-stable storage.

Swap the shallot

How well each one fits the dish's main ingredients (tomato, capsicum):

  1. Eggplantfits better
  2. Okrafits better
  3. Cucumberfits better
  4. Shallotthe original

Fit is the average pairing score against tomato, capsicum. Candidates are from the same food group and used in at least 100 recipes.
