Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
The main meat, whose firm texture the cure penetrates and seasons throughout.
Saltpetre
Helps preserve the meat and gives the cured beef its characteristic colour.
Coarse sugar
Adds sweetness and balances the sharpness of the salts.
Coarse sea salt
Draws moisture out of the meat and seasons it during the long cure.
Treacle
Adds sweetness, dark colour and a rich molasses flavour to the crust.
Ground black pepper
Adds a sharp, aromatic bite to the cured surface.

The step that matters

Rub and turn daily for 14 days. Salt and cure move into meat slowly by diffusion, so turning keeps every surface in contact with the cure and prevents uneven curing and spoilage in spots.
