What each ingredient does

Cold beef or mutton
Provides the meat that is heated through in the thickened liquid.
Bones
Release flavour and body into the stock as they simmer.
Rice flour or arrowroot
Thickens the strained stock into a light gravy.
Onion
Adds savoury depth to the stock as it stews.
Carrot
Adds sweetness and body to the stock as it stews.

The step that matters

Reducing the stock to about ¾ pint. Reducing concentrates flavour, but over-reducing leaves too little liquid to thicken and heat the meat. Stop at the stated volume so the stock stays balanced.
