What each ingredient does

Green gooseberries
Provide the fruit, pectin and tartness that give the jam its body and flavour.
Powdered sugar
Sweetens the jam and helps it thicken and set as it boils down.

The step that matters

Boiling quickly with constant stirring. Sugar and fruit must reach a hard boil and be stirred to keep them from scorching on the bottom. Removing scum keeps the jam clear and fresh-tasting.
