Oreen Gooseberries for Tarts

Ingredients

Directions

  1. Fill clean, dry, wide-necked bottles with gooseberries before they reach full growth.

  2. Cork the bottles lightly and wrap a little hay around each.

  3. Place the bottles upright in a pot of cold water and gradually bring to a boil.

  4. Simmer gently until the gooseberries appear shrunken and scalded.

  5. Remove the bottles and fill them with the contents of one or two bottles.

  6. Pour in enough water to cover the gooseberries completely to prevent mold.

  7. Cork the bottles tightly and seal the necks with melted rosin.

  8. Store in a cool place.

  9. When ready to use, pour off most of the water and add sugar as for fresh fruit.
