Why it works: Thyme and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,057 recipes. Both carry cuminaldehyde, which smells Spicy, cumin. The science ↓

What each ingredient does
- Veal gravy
- Provides the main liquid and savoury body that the sauce is built on.
- Flour
- Thickens the sauce as it cooks, giving it body and a smooth texture.
- Butter
- Adds richness and carries flavour, and when kneaded with flour it helps thicken the finished sauce.
- Sherry or madeira
- Adds wine flavour and acidity that brightens the rich, savoury sauce.
- Lean ham
- Releases savoury, salty flavour into the butter and liquid during simmering.
The step that matters
Adding the flour and butter paste at the end. Flour thickens only when heated in liquid, so the flour-butter paste must be whisked in and brought to a boil to cook out its raw taste and fully thicken the sauce.
Swap the mace
