What each ingredient does

Young cucumbers
Form the body of the sauce and, fried until golden, add browned, savory flavor.
Butter
Fat that carries flavor and helps the cucumber slices brown in the pan.
Beef broth or brown gravy
Liquid base that gives the sauce its savory, meaty flavor.
Onion
Adds savory sweetness as it browns alongside the cucumbers.

The step that matters

Frying the cucumbers until golden brown. Browning through the Maillard reaction builds deep, savory flavor. Pale or undercooked cucumbers leave the sauce tasting flat and raw before the broth is added.
