Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh mushrooms
Release their liquid during salting, forming the base of the ketchup.
Coarse sea salt
Draws moisture out of the mushrooms and helps preserve the mixture during resting.
Ready-made catsup
Adds tomato sweetness and acidity to the mushroom liquid.
Whole black pepper
Contributes sharp, aromatic heat to the boiled liquid.
Ground mace
Adds warm, aromatic spice flavor to the boiled liquid.

The step that matters

Stirring over 4 days. Salt must draw liquid out of the mushrooms and mix evenly through the batch. Occasional stirring prevents pockets of unsalted mushroom from spoiling during the long rest.

Swap the mace
