Dried Mushrooms
Ingredients
Directions
The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Peel the mushrooms and remove the stems and fur.
Arrange the mushrooms on tins or dishes.
Dry them gradually in a gentle oven at 300°F (150°C).
Once dried, store them in tin canisters away from dampness.
To prepare for serving, boil the mushrooms in water briefly, then drain and dry them again.
Add the mushrooms to cold gravy and heat slowly, simmering until tender.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
