Ingredients

Directions

Prepare the powder

  1. Prepare and dry the mushrooms thoroughly.

  2. Pound the dried mushrooms into a very fine powder.

  3. Sift the powder and immediately transfer it into small, dry bottles.

  4. Cork and seal the bottles to prevent moisture exposure.

Flavour and make the sauce

  1. If using spices, heat them in the oven before mixing with the powder.

  2. To make a sauce, combine 1 teaspoon of mushroom powder with ¼ pint of veal gravy, ½ cup of cream, and 2 teaspoons of flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main mushroom flavour, which concentrates when dried and ground into powder.
Veal gravy
Adds savoury body and meaty depth to the sauce.
Cream
Adds richness and a smooth, silky texture to the sauce.
Flour
Thickens the sauce so it holds together with the powder and gravy.

The step that matters

Drying and sealing the mushrooms. Mushrooms must be dried thoroughly before grinding, and the powder kept dry and sealed, because residual moisture encourages spoilage and clumping in the powder.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, veal, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
