Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean pork
Provides the main body of meat, giving the cakes their bite and structure.
Fat pork
Adds moisture and richness, keeping the cooked sausage from drying out.
Salt
Seasons the meat and helps draw out and bind its proteins for a cohesive texture.
Sage
Contributes the dominant herb aroma that defines the sausage's flavour.

The step that matters

Roasting the cakes. Turning them frequently prevents the flour-dusted surfaces and the sugars and proteins in the meat from scorching before the centre cooks through, which would leave a burnt exterior and an undercooked interior.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (pork, pepper, sage, mace):

  1. Marjoramfits better
  2. Thymefits better
  3. Allspicefits about as well
  4. Nutmegthe original

Fit is the average pairing score against pork, pepper, sage, mace. Candidates are from the same food group and used in at least 100 recipes.
