What each ingredient does

Partridges
Form the main body of the dish, cooked whole with the stuffing inside.
Mushrooms
Add moisture and savoury flavour to the stuffing as they soften and release liquid.
Butter
Carries flavour and adds richness while the mushrooms cook gently.

The step that matters

Stuffing the cooled mushrooms into the birds. The mushrooms should be cooled before stuffing so that their hot liquid does not make the cavity wet or cause the stuffing to break down. Packing them firmly but not tightly lets heat reach the centre of the bird during roasting.
