Ingredients

Directions

Make the onion base

  1. Slice and fry 3 large onions in 2 ounces of butter until done, then remove from the pan.

  2. In a stewpan, combine 3 pounded onions and 1 small clove of garlic with 2 teaspoons turmeric, 1 teaspoon powdered ginger, 1 teaspoon salt, and 1 teaspoon cayenne pepper.

  3. Add the butter from frying the onions and ½ cup of good gravy; let it stew for 10 minutes, stirring occasionally to prevent burning.

  4. Stir in the fried onions and ½ pint more gravy.

Cook the meat

  1. Add 1½ pounds of mutton or other meat and simmer gently for 1 hour or until tender.

What each ingredient does

Onions
Break down into a thick, sweet base that gives the curry body.
Butter
Carries the spices and adds richness to the frying onions and sauce.
Mutton or other meat
Provides the main protein, which becomes tender through slow simmering.
Gravy
Supplies the liquid that cooks the spices and onions into a sauce.

The step that matters

Stewing the spiced onion base. Stirring often keeps the onions and spices from scorching on the bottom of the pan, since scorched sugars and spices turn bitter and dark. Gentle heat lets the onions soften and the flavours blend before the meat goes in.
