Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

A Sefton, or Veal Custard

Oven, in the book's wordsA very slow oven

Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard

  1. Pour boiling veal gravy over the beaten and strained eggs.

  2. Add the grated lemon rind, cayenne, salt, and mace, and mix well.

  3. Add the clarified butter.

  4. Pour in the egg mixture.

Bake and serve

  1. Prepare a paste border around a dish.

  2. Bake in a slow oven at 300°F (150°C) for 25 to 30 minutes, until firm in the middle.

  3. Serve with additional gravy or a sauce made from small mushroom buttons.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh eggs
Set the custard into a firm, sliceable structure as they cook.
Veal gravy
Adds savory body and liquid, and its heat begins cooking the beaten eggs.
Clarified butter
Adds richness and a smooth mouthfeel to the custard.
Lemon rind
Adds bright aromatic flavor that cuts the richness of the custard.

The step that matters

Bake in a slow oven until just firm. Egg proteins set with heat, so overbaking at too high a temperature makes the custard curdled, rubbery and watery. Baking slowly until just firm in the middle keeps it smooth and tender.

Swap the mace

How well each one fits the dish's main ingredients (veal, egg, lemon, pepper, butter):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Sagefits better
  4. Macethe original

Fit is the average pairing score against veal, egg, lemon, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
