What each ingredient does

Greengages
Provide the fruit, pulp and natural pectin that help the jam thicken and set.
Sugar
Sweetens the jam and, at this concentration, helps it set and keep.

The step that matters

Adding the sugar and boiling briefly. Sugar is added to fruit already cooked down, then boiled for a short, set time. Sugar concentration and boiling temperature together determine the set, while a longer boil can darken the jam and dull its flavour.
