Ingredients

Directions

  1. Steam or boil the potatoes until very dry, then rub them through a coarse sieve while hot.

  2. Mix the potatoes with the flour thoroughly.

  3. Add the yeast immediately after mixing in the potatoes.

  4. For superior rolls, add butter, an egg, and some new milk.

  5. In a separate bowl, mix the yeast, molasses, warm water, and pearlash or saleratus.

  6. Make a hole in the flour mixture and stir in the wet ingredients until it resembles batter.

  7. Form the dough into four loaves, each weighing about 2 pounds when baked.
