Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal or mutton
Provides the meat flavour and gelatin-rich connective tissue that gives the broth body.
Rice
Releases starch as it cooks, which thickens the broth slightly.

The step that matters

Skim off impurities after bringing to a boil. Foam and coagulated proteins rise to the surface as the broth heats. Skimming them early keeps the broth clear and clean-tasting rather than cloudy or scummy.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (veal, rice):

  1. Turmericfits better
  2. Celeryfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against veal, rice. Candidates are from the same food group and used in at least 100 recipes.
