What each ingredient does

Cod
Forms the flakey main body of the dish, cooked gently so it stays intact.
Veal gravy or broth
Provides the liquid base of the sauce and carries its savoury flavour.
Bread crumbs
Thicken the sauce slightly and give it body as they simmer.
Arrow-root
Starch that thickens the sauce to a smooth, glossy consistency.
Essence of anchovies
Adds deep savoury, salty umami flavour to the sauce.
White wine
Adds acidity and aroma that brighten the rich sauce.

The step that matters

Mixing the arrow-root into the sauce. Starch lumps if added to hot liquid without first being mixed smooth with the sauce, so stir it until fully dispersed before adding the other flavourings and boiling.

Swap the mace

How well each one fits the dish's main ingredients (fish, veal, bread, pepper, white wine, lemon):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against fish, veal, bread, pepper, white wine, lemon. Candidates are from the same food group and used in at least 100 recipes.
