What each ingredient does

Leftover cooked fish
Forms the main body of the dish, flaking into the warm sauce.
Butter
Adds richness and fat, carrying flavour through the sauce.
Flour
Thickens the butter and water into a smooth sauce that coats the fish.
Lemon juice or chili vinegar
Adds acidity that brightens the rich butter sauce just before serving.

The step that matters

Heat the fish slowly in the sauce, stirring until well mixed.. Gentle heat keeps the cooked fish tender and prevents it from toughening or breaking apart, while stirring spreads the flour-thickened sauce evenly so it coats the flakes without lumps.

Swap the parsnip

How well each one fits the dish's main ingredients (fish, butter, flour, pepper, parsley, lemon):

  1. Shallotfits better
