A Finer Oyster Forcemeat

Ingredients

Directions

  1. Pound the forcemeat to a smooth paste, adding fresh butter if too dry.

  2. Poach or fry the forcemeat in balls for soups or to fill boned fowls or boiled turkeys.

  3. For mushroom forcemeat, cut stems off small mushrooms, peel, and remove the fur.

  4. Melt 1½ ounces of butter in a saucepan, add mushrooms, cayenne, and mace, and stew for 5 to 7 minutes, shaking well.

  5. Transfer mushrooms to a dish to drain liquid and cool.

  6. Mince the cooled mushrooms and mix with bread-crumbs, remaining butter, and egg yolks.

  7. Add salt, cayenne, mace, nutmeg, and lemon rind, mixing thoroughly.

  8. Use the forcemeat poached in small balls for soup or fried with roast fowls.
