What each ingredient does

Beef
Dense muscle that becomes tender and sliceable after long, gentle simmering.
Fine salt
Draws out moisture and seasons the meat during the curing period.
Brown sugar
Adds sweetness and balances the salt and warm spices in the cure.
Beef broth
Provides the cooking liquid that gently heats the beef and builds savory flavor.
Carrots
Add sweetness and body to the broth as they cook down.

The step that matters

Simmer gently for 4½ hours. A rolling boil toughens the meat's proteins and makes the beef stringy, while a gentle simmer lets connective tissue slowly break down into tender, moist meat.

Swap the mace

How well each one fits the dish's main ingredients (beef, pepper, clove, nutmeg, sugar, onion, thyme):

  1. Allspicefits better
  2. Cinnamonfits better
  3. Marjoramfits better
  4. Macethe original
