Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal
Provides the main body of meat and collagen that becomes tender and rich during long simmering.
Rice
Absorbs cooking liquid and softens, adding body and texture to the finished dish.

The step that matters

Skimming the water after it comes to a boil. Scum is coagulated proteins and impurities released from the meat. Removing them keeps the cooking liquid clear and the flavor clean, so the broth does not turn cloudy or taste muddy.

Swap the white pepper

How well each one fits the dish's main ingredients (veal, rice, pepper, mace, parsley, butter):

  1. Nutmegfits better
  2. Marjoramfits better
  3. Thymefits better
  4. White pepperthe original
