Ingredients

Directions

Prepare

  1. Prepare the partridges by cleaning and trussing them securely.

  2. In a pan, melt the butter over low heat.

  3. Add the mushrooms, salt, and cayenne, and simmer for 8 to 10 minutes.

  4. Remove from heat and let the mixture cool, then stuff it into the partridges.

Roast or stew

  1. Sew the openings closed and roast the partridges on a spit or vertical jack for 30 to 40 minutes.

  2. Alternatively, you can stew the partridges in gravy for 1 hour, adding mushrooms for the last 30 minutes.

Make the sauce

  1. For sauce, mix butter with arrowroot, cayenne, and optional catsup or wine.

What each ingredient does

Partridges
Provide the main meat, which is cooked whole around the stuffing.
Mushroom buttons
Add moisture and savoury flavour to the stuffing as they cook down.
Butter
Adds richness and carries flavour while the mushrooms cook and into the sauce.
Arrowroot
Thickens the sauce to a glossy consistency without making it cloudy.

The step that matters

Cooling the mushroom stuffing before stuffing the birds. Warm stuffing packed into a raw bird can hold heat unevenly and slow cooking, so letting it cool first helps the bird cook through safely and evenly.
