Stewed Cucumbers

Ingredients

Directions

Prepare

  1. Pare and quarter the cucumbers, removing the seeds and cutting each piece in half.

  2. Sprinkle with white pepper or cayenne and dust with flour.

Fry and stew

  1. Fry the cucumbers lightly in butter until golden.

  2. Remove from the pan and drain on a sieve.

  3. Place the cucumbers in a pot with brown gravy and stew gently for 25 to 30 minutes until tender.

  4. If the gravy needs thickening, keep the cucumbers warm while stirring in flour and butter.

  5. Add lemon juice, chili vinegar, or cucumber vinegar to the sauce if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Main vegetable; they soften during stewing and take on the flavour of the gravy.
Flour
Dusted on the cucumbers before frying and used to thicken the gravy if needed.
Butter
Fat for frying the cucumbers, adding richness and golden browning.
Brown gravy
Liquid that cooks the cucumbers and forms the sauce around them.

The step that matters

Stew gently until tender. Gentle heat softens the cucumbers evenly without breaking them down, while the gravy is kept from boiling hard and turning cloudy or thick too quickly.

Swap the cucumber

The recipe marks cucumber as optional. How well each one fits the dish's main ingredients (white pepper, flour, butter, lemon):

  1. Shallotfits better
  2. Arrowrootfits better
  3. Leekfits better
  4. Cucumberthe original

Fit is the average pairing score against white pepper, flour, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
