What each ingredient does

Red cabbage
Forms the bulk of the pickle and gives it its crisp, sliceable texture.
Coarse sea salt
Draws moisture out of the cabbage, softening it and concentrating its flavor.
Vinegar
Acidifies the cabbage, preserving it and giving the pickle its sharp taste.
Black pepper
Adds aromatic heat and spice to the vinegar that soaks into the cabbage.

The step that matters

Draining the salted cabbage. Salt must be given enough time to draw out water; if the cabbage is not drained well, excess moisture dilutes the vinegar and the pickle can turn soft and watery.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Capsicumfits better
  2. Mustardfits about as well
  3. Cabbagethe original
  4. Cucumberfits less well

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
