Cambridge Milk Punch

Ingredients

Directions

  1. Combine the new milk and lemon rind with the sugar in a pot.

  2. Slowly bring the mixture to a boil, then remove the lemon rind.

  3. Take the pot off the heat and quickly stir in the whisked eggs mixed with cold milk, straining through a sieve.

  4. Ensure the milk does not boil after adding the eggs.

  5. Gradually add the rum and brandy, froth the punch, and serve immediately in warm glasses.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

New milk
Forms the creamy base of the punch and carries the other flavours.
Eggs
Thicken the punch and give it a smooth, rich body when gently heated.
Rum
Adds aroma and warmth, and helps balance the sweetness of the milk.
Brandy
Adds depth of flavour and fruity aroma to the punch.
Sugar
Sweetens the punch and balances the richness of milk and spirits.

The step that matters

Keep the milk from boiling after adding the eggs. Eggs scramble and curdle when heated too much, leaving a grainy texture. Removing the pot from the heat before stirring in the egg mixture, and keeping the milk below boiling, keeps the punch smooth.
