Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main almond flavour and body once pounded fine and simmered into the stock.
Hard-boiled egg yolks
Add richness and a smooth, creamy mouthfeel to the soup.
Butter and flour
Thicken the soup through a roux-style kneaded mixture stirred into the liquid.
Heavy cream
Adds fat and a silky, rich texture when stirred in at the end.

The step that matters

Simmering the almond mixture gently. Boiling vigorously can cause the egg yolks and fine almond solids to curdle or separate, leaving the soup grainy. Gentle heat keeps it smooth and lets the almond flavour develop evenly.

Swap the white pepper

How well each one fits the dish's main ingredients (almond, egg, veal, butter, flour, cream):

  1. Nutmegfits better
