What each ingredient does

Venison
Provides the main meat flavor and, as it simmers, releases richness into the broth.
Ham
Adds salty, savory depth that seasons the broth as it stews.
Butter
Adds fat and a silky mouthfeel to the finished soup.
Port or madeira wine
Adds aromatic sweetness and depth to the broth as it boils.
Celery
Contributes vegetal aroma and body to the simmered broth.

The step that matters

Boil gently for the full time. Slow, gentle simmering draws collagen and flavor out of the meat and bones into the broth, while a hard rolling boil can cloud the liquid and toughen the meat. Keep the heat low and the liquid barely bubbling.

Swap the mace

How well each one fits the dish's main ingredients (venison, ham, onion, pepper, meat, celery, butter):

  1. Thymefits better
  2. Parsleyfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against venison, ham, onion, pepper, meat, celery, butter. Candidates are from the same food group and used in at least 100 recipes.
