Fillet of Veal Roasted

Ingredients

Directions

  1. Cut off the knuckle of the leg of veal above the joint to create a fillet.

  2. Remove the bone and fill the space with stuffing.

  3. Add a layer of stuffing under the fat.

  4. Truss the fillet by drawing the fat around it and tie it with tape.

  5. Wrap the fillet in paper and place it a good distance from the fire.

  6. Roast until thoroughly cooked, with no red gravy visible.

  7. Serve with melted butter poured over and gravy around.

  8. Accompany with ham or bacon and fresh cucumbers if in season.
