Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Browning develops sweetness and deep flavor, and softened onions give the sauce body.
Butter
Fat that carries flavor and adds richness while the onions cook.
Beef gravy
Savory liquid base that becomes the sauce as it simmers and thickens.
Lemon juice
Acidity that brightens the rich, savory sauce.

The step that matters

Browning the onions. Onions need slow, even browning over medium heat. Too much heat scorches the sugars and makes a bitter taste, while too little leaves them pale and flat in flavor.

Swap the onion

How well each one fits the dish's main ingredients (butter, beef, pepper, lemon, sugar):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against butter, beef, pepper, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
