What each ingredient does

Liver
Breaks down into the body of the sauce, giving it richness and a thick, savoury texture.
Good gravy
Provides the liquid base that the liver cooks in and thins into a pourable sauce.
Currant jelly
Adds sweetness and fruity body that balances the savoury liver and sharp vinegar.
Chili vinegar
Adds acidity and sharpness that cut through the richness of the liver and butter.
Butter
Adds fat that gives the finished sauce a smooth, rounded mouthfeel.
Crumb of a penny roll
Soaked in wine and stirred in, it helps thicken the sauce.

The step that matters

Beat smooth and let it boil. Pounding the liver and beating the sauce smooth breaks up fibres so it does not turn grainy. A brief boil then thickens the sauce and cooks the raw-tasting liver fully, so the sauce is safe and well set when served.
