Directions

  1. In a round-bottomed basin, combine the egg yolk and salt.

  2. Stir quickly while adding the salad oil drop by drop until thick.

  3. Add a few drops of tarragon vinegar, then continue adding oil until you have enough sauce.

  4. Thin the sauce with a little more vinegar to achieve a thick, slightly acidic consistency.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Its lecithin emulsifies the oil into the water, letting the sauce thicken and hold together.
Salad oil
Forms tiny droplets suspended in the yolk, giving the sauce its thick, rich body.
Tarragon vinegar
Adds acidity and aromatic flavour that balances the richness of the oil.

The step that matters

Adding the oil drop by drop while stirring quickly. The egg yolk can only hold a limited amount of oil in suspension at first. Adding oil too fast overwhelms the emulsifier, so the mixture separates and fails to thicken.
