Pigeon Pie

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the rump steak into thin slices and cover the bottom of a dish with it.

  2. Season with parsley and shallot.

  3. Chop the hard-boiled eggs and pigeon livers finely, then mix with bread crumbs, pepper, salt, and butter.

  4. Fill the pigeons with the mixture and place them in the dish.

  5. Add more seasoning and cover with additional steak.

  6. Pour in water or gravy, cover with puff pastry, and cut decorative leaves to place on top.

  7. Brush with egg wash and bake at 400°F (200°C) until golden.
